A veggie stir fry is one of my go-to fast foods! I sauté up a variety of rainbow coloured vegetables, cook some rice and voila ready in about 15 minutes!! Throw some kind of nuts and a handful of bean sprouts on top and you have yourself a very quick and nutritious dinner!! Who said eating healthy took too much time?
To keep this quick I created a simple sugar free stir fry sauce to throw on top of the vegetables once they were ready. I realised all the store bought sauces were laden with sugar, all listed under the many names that sugar hides behind (see my post on sugar to see these names), it was getting on my nerves. So I decided to make my own! Here it is for you!
Sugar Free Stir Fry Sauce:
1 tbsp Natural Peanut Butter
2 tbsp Soy Sauce
1 tbsp White Vinegar
1/2 tsp Seasame Oil (I use seasame oil to saute the veg too sometimes)
1/4 tsp Cayenne Pepper
OPTIONAL: Ginger Powder to taste (Although I add fresh grated ginger to all my stir fry dishes)
METHOD: Mix all together in a measuring cup or whatever little vessel you like. I microwave it for 20 secsonds to melt the peanut butter a little so it mixes better. Thats it!
