I have a sweet tooth, and I love finding ways to satisfy my need for sweetness with treats that are good for me.
Dark chocolate is full of antioxidants, black beans are high in fibre & protein, honey is antibacterial and coconut oil is an awesome source of healthy fats. So this tasty treat ticks all the boxes!!
I find foods laden in sugary ingredients, such as high fructose corn syrup, dextrose, maltodextrin etc can wreak havoc with my digestion and nervous system. This isn’t ideal when trying to keep anxiety symptoms at bay. Although these brownies contain sugar, its natural sugar without all the man-made hormone disrupting chemicals. They are SO delicious and easy to make.
Chocolate Black Bean Brownies
(makes about 8-9 brownies)
1 can (396ml) black beans, rinsed & drained
1.5 tbsp coconut oil, melted
1/2 c dark chocolate chips, melted a little
1/3 c oat flour*
1/3 c honey
1 tbsp cacao
1 flax egg (mix 1 tbsp flax meal with 3 tbsp water, let sit for 15 mins)
1 tsp baking soda
Extra choc chips for topping
1) Preheat oven to 370F and line a small square baking tray with coconut oil.
2) Place black beans, coconut oil, and dark chocolate in the food processor. Blend until smooth, then add the oat flour, cacao, honey, flax egg, and baking soda. Pulse until just combined.
3) Spread the mix into the square baking tray, sprinkle with extra chocolate chips, place in the oven for about 30 minutes. Poke with a toothpick (or chopstick!), and if comes out clean its ready! Let cool for 10 minutes!
*To make oat flour, blend 1/3 cup of rolled oats in the food processor. Usually 1 cup of rolled oats makes 1 cup of oat flour)
